In Vietnamese culinary, rice paper is considered as indispensable ingredients in many special dishes. And when “rice paper” gets mentioned, to any Vietnamese, it is a close and simple product spreading across the country from the North – South and Central area, it is easily found in the stalls, from the big supermarket to the small groceries store in an alley. Vietnamese people or even the foreigners, who has been to the S-shaped country, can list some dishes they tasted having rice paper as an ingredients: spring rolls, pork rolls…
The raw material of rice paper is also derived from white rice grains, representing a picture of an agricultural country with the strength of paddy rice, and the making process is extremely simple and rustic: pounding rice into rice flour then thin coating, (“banh” means the product of rice flour, “trang” means “thin coating”) then it has the name “banh trang”.
Vietnamese rice paper is usually divided into three main categories:
1. Grilled rice paper: thick rice paper, must be grilled before serving, then it is called grilled rice paper
2. Thin rice paper: as thin as a sheet of paper (rice paper).
3. Wet rice paper is thicker than thin rice paper, the rice paper then get exposed to frost to be softer and chewier, no need to soak water before using.
By the sophistication of eating, Vietnamese people have combined rice paper with other materials to create dishes bearing national identity, and thanks to the development of travel industry, as well as the internet Vietnamese cuisine has reached out to the world. Along with this, rice paper also represents itself as a "unique" raw material that only available in Vietnam. In addition, many Vietnamese cuisines owned by overseas compatriot has also contributed to bringing Vietnamese culinary in general and rice paper closer to the world, obtaining the recognition by the international culinary community.
