European-Style Bánh Tráng Nướng — Rice Paper Pizza with Egg, Cheese & Cured Ham
Serves: 1 (as a snack or appetizer) — easily doubled or tripled for more guests
After many years in the kitchen, I'm still struck by how a humble, everyday ingredient can be "seen" in a completely different light. Sun-dried rice paper is normally just for wrapping fresh rolls in Vietnam, but with a bit of European-pizza-style creativity, placing it directly onto a dry, hot pan makes it behave surprisingly like a pizza crust: it pulls taut, turns crisp, and becomes sturdy enough to hold both the egg layer and the toppings above it. This is a principle every cook knows well — a thin, starchy, dry ingredient loses moisture extremely fast under direct heat and crisps up almost instantly, not unlike the way grilled rice paper with scallion oil is made at countryside markets in Vietnam.
The secret lies in two things beginners often overlook: the pan must be completely dry and properly hot before the rice paper goes in — if the pan is even slightly damp or not hot enough, the rice paper will stick and turn soggy instead of crisp; and the egg must be spread while it's still wet, because within seconds the rice paper absorbs the moisture and the egg can no longer be spread evenly.
Ingredients
-
1 round sheet of dry rice paper (not soaked in water)
-
1 egg, beaten
-
A little scallion, finely chopped
-
Shredded cheese (a good melting type, such as mozzarella), a small handful
-
2–3 slices Italian-style cured ham (prosciutto) or jambon, torn into pieces
-
A few leaves of arugula (or similar sprouts/herbs if unavailable)
-
No extra oil needed — the rice paper and egg already provide enough fat to keep the pan from sticking
Instructions
-
Heat the pan: Place a nonstick pan over medium to medium-high heat, no oil, and let it heat through evenly. Lay the whole dry rice paper sheet in the center of the hot pan — the edges will curl slightly, which is a normal sign that the pan is hot enough.
-
Spread the egg over the rice paper: Pour the beaten egg into the center of the rice paper and quickly spread it evenly across the surface using the back of a spoon, leaving a small border near the edge untouched.
-
Add the first layer of toppings: While the egg is still wet, immediately sprinkle the chopped scallion and shredded cheese over the top — doing this while the egg is still liquid helps the toppings adhere instead of falling off once the base crisps up.
-
Let it cook and set: Keep the heat steady for a few minutes without stirring or flipping. Watch until the egg turns from translucent yellow to an opaque yellow, the surface sets, and the outer edge begins to turn light brown and crisp.
-
Add the cured ham: Once the surface has set and the cheese has started to melt slightly, arrange the prosciutto pieces on top, spacing them evenly across the pizza.
-
Finish and plate: Lift the pizza off the pan and place it on a wooden board. Scatter fresh arugula leaves on top while the pizza is still hot — the residual warmth will gently wilt the leaves and release their aroma without fully softening them. Enjoy immediately while still crisp, cutting it into pieces with kitchen scissors or folding it in half to eat by hand.
Cook's note: This dish doesn't wait well — if left to sit for more than five minutes, moisture from the cheese and greens will soften the crisp base. When making several at once, it's best to cook and serve them one at a time, the same way street vendors in Vietnam sell grilled rice paper: hot off the pan and straight into the customer's hands.
