Vegan Rice Paper Dumplings — Mushroom, Carrot & Tofu Filling
Serves: 2 (as a snack or appetizer) — about 6 pieces, double the ingredients for a main meal
I used to think dumplings absolutely required an elaborately kneaded dough wrapper — until I saw rice paper used in a completely different way from the traditional spring roll fold: instead of rolling it into a cylinder, you fold it into a square like an envelope, sealing the vegetable filling inside, then pan-fry it until the outside turns crisp. What's interesting is that this thin rice paper, once fried, produces a texture remarkably close to a traditional pan-fried dumpling wrapper — crisp where it meets the pan, yet still soft and chewy at the folded layers inside.
The filling here is entirely plant-based, yet still deeply savory thanks to mushroom and soy sauce — a combination familiar to anyone who's made a vegan filling before: mushrooms bring umami in place of meat, crumbled tofu gives that same loose, textured bite you'd expect from ground meat, and shredded carrot adds a touch of natural sweetness along with color.
Ingredients
For the filling:
-
2 scallions, finely chopped
-
100g mushrooms (white button or cremini), diced
-
1 small carrot, shredded
-
1 handful leafy greens (spinach or a similar leafy vegetable), finely chopped
-
100g tofu, crumbled by hand
-
2–3 tablespoons soy sauce
-
Cooking oil, for sautéing
For the wrappers:
-
6 square or round rice paper sheets
-
Clean water (to wet the work surface when handling the rice paper)
For the dipping sauce:
-
Soy sauce
-
A little sesame oil or chili oil
-
Toasted sesame seeds
Instructions
-
Build the base: Heat a pan with a little oil and sauté the chopped scallions until fragrant.
-
Add the mushrooms: Add the diced mushrooms and cook until they shrink down and release some of their moisture.
-
Add the carrot and greens: Stir in the shredded carrot, then add the chopped greens, tossing quickly in the hot oil just until wilted, keeping their color fresh and vibrant.
-
Add the tofu: Add the crumbled tofu and mix well with the vegetables.
-
Season with soy sauce: Pour in the soy sauce and stir everything together until well coated and any excess liquid in the pan has mostly cooked off. Turn off the heat and let the filling cool slightly before wrapping.
-
Prepare to wrap: Evenly wet the surface of a large plate or clean countertop with water. Lay a rice paper sheet on top and let it sit for a few seconds to soften.
-
Fill and fold: Spoon a portion of filling into the center of the rice paper. Fold the edges in one at a time, overlapping them envelope-style, fully enclosing the filling into a neat square parcel. Repeat with the remaining rice paper sheets.
-
Pan-fry: Heat a nonstick pan with a little oil and place the folded dumplings in, seam-side down first. Cook over medium heat until the side touching the pan turns golden brown with those characteristic crispy blistered spots, then flip and fry the other side the same way until both sides are crisp.
-
Make the dipping sauce: Mix soy sauce with a little sesame oil or chili oil, and sprinkle toasted sesame seeds on top.
-
Serve: Arrange the dumplings on a plate while still hot and crisp, with the dipping sauce alongside.
Note: Unlike traditional dough dumplings that are steamed before frying, rice paper cooks through almost entirely from the pan's heat alone — so don't let the heat run too high, or the outside will burn before the filling is properly warmed through. Medium heat and the patience to let each side brown evenly is the real secret to getting that perfect crisp without any scorching.
