Crispy Rice Paper Pork Mandu (Dumplings)

Ingredients:
- Wrappers: 1 pack of Tanisa rice paper.
- The Filling: 150g minced pork, 40g cabbage (finely chopped), 50g king oyster mushrooms (finely chopped), minced shallots, minced tỏi (garlic), minced gừng (ginger), and chopped green onions.
- Seasoning: 1 tsp mushroom seasoning powder, $1/2$ tsp black pepper, 1 tbsp oyster sauce, a pinch of sugar, and a drizzle of sesame oil.
- Dipping Sauce: Soy sauce, red vinegar, fresh chili slices, and a spoonful of sate chili oil.
- To Serve: Fresh herbs and sliced cucumber.
Quick Steps:
1. Make the Filling
In a bowl, thoroughly combine the minced pork, chopped cabbage, mushrooms, green onions, shallots, garlic, and ginger.
Mix in the seasoning (seasoning powder, pepper, oyster sauce, sugar, and sesame oil). Let the filling marinate for 15 minutes. (Optional: Stir-fry the filling briefly beforehand for quicker pan-frying later).
2. Wrap the Mandu
Dip a sheet of rice paper into a plate of water until soft but not too soggy.
Fold the rice paper in half or thirds to create a thicker, sturdier wrapper.
Place a tablespoon of filling in the center, fold the edges to form a half-moon or rectangular packet, and press down gently to flatten.
3. Pan-Fry
Heat a little cooking oil in a non-stick skillet over medium-low heat.
Add the mandu and fry until the bottom is golden and crispy.
Flip over, then cover the pan with a lid for 1-2 minutes so the steam cooks the meat filling completely. Fry until both sides are perfectly crispy.
Plating & Serving
Serve the hot mandu immediately with fresh herbs and sliced cucumber. Dip into the tangy, spicy soy-sate sauce. The outside will be incredibly crispy, the inside chewy, and the pork filling juicy and flavorful!
