Ingredients:

Base: Rice paper sheets.
The Filling: 2 medium potatoes, 1 small carrot (finely diced), 3-4 mushrooms (finely diced), 50g mozzarella cheese (shredded), 15g butter.
Seasoning: Salt and black pepper to taste.
Optional: A little oil or melted butter for brushing before baking.

Quick Steps:

1. Make the Filling

Peel and chop the potatoes. Boil them in salted water until soft, then drain and mash until completely smooth.

Melt 15g of butter in a pan over medium heat. Add the diced carrots and mushrooms, stir-frying until cooked through and fragrant.

In a mixing bowl, combine the mashed potatoes, the stir-fried veggies, and the shredded mozzarella cheese. Season with salt and pepper, then mix thoroughly.

2. Wrap into Triangles

Lightly moisten a sheet of rice paper with water until pliable.

Place a generous spoonful of the potato-cheese filling in the center.

Fold the edges of the rice paper inward over the filling to form a neat triangle shape, ensuring the filling is fully sealed.

3. Bake until Crispy

Preheat your oven or air fryer to 180°C (350°F).

Arrange the triangles on a baking sheet. Lightly brush the tops with a little oil or melted butter for extra crunch.

Bake for 10-12 minutes, flipping halfway through, until the rice paper becomes golden and crispy.

Plating

Serve the warm, crispy potato triangles on a wooden platter. Garnish with a bit of fresh parsley and pair with sweet chili sauce or ketchup for dipping.
