Crackly–Chewy Rice Paper Salmon Rolls

This dish was born from the wave of “wrap it in rice paper” videos taking over social media — and salmon turns out to be the perfect candidate for this technique.

Cradled by the rice paper, the fish stays moist and cooks evenly without falling apart.

Seared in hot oil, the wrapper turns delicately crisp on the outside with a chewy, mochi-like pull — eat these straight off the heat for the full contrast of hot and cool, crackle and chew.

Ingredients

Marinated salmon:

  • Serves 4
  • 1 lb (450g) skinless salmon fillet (preferably wild), cut into strips about 3 x 1 inch (7.5 x 2.5cm)
  • 3 tablespoons red curry paste
  • 2 teaspoons salt (or 1¼ teaspoons, depending on salt type), plus more to taste
  • 1 teaspoon sugar

Dipping sauce:

  • 3 tablespoons fresh lime juice
  • 1 tablespoon sugar
  • 1 teaspoon red curry paste
  • Salt, to taste

For the rolls:

  • 8–12 round rice paper sheets (about 8 inches / 20cm in diameter)
  • 4 tablespoons vegetable oil, divided

To serve: tender lettuce (Bibb or green leaf), fresh herbs (cilantro, dill, basil), thinly sliced radish, thinly sliced cucumber

Instructions

Marinate the salmon: Toss the salmon with 3 tablespoons red curry paste, the salt, and 1 teaspoon sugar, using your hands to coat evenly.

Make the dipping sauce: Stir together the lime juice, 1 tablespoon sugar, and 1 teaspoon red curry paste; season with salt to taste.

Soften the rice paper: Quickly dip each sheet in a bowl of water, just until pliable but not soggy.

Roll: Place a strip of salmon on the rice paper and roll it up gently but tightly around the fish, leaving both ends open (this lets steam escape while frying, so the wrapper crisps up better).

Fry: Heat a cast-iron or nonstick skillet with 2 tablespoons oil over medium heat. Fry the rolls in batches until the rice paper is golden and crisp all over, adding more of the remaining oil between batches as needed.

Serve: Arrange the rolls on a platter with the lettuce, herbs, radish, and cucumber. Eat immediately while hot and crisp, with the lime-curry dipping sauce on the side.
