Crispy Rice Paper Appetizer with Mashed Root Veggies
Servings: 2 | Total Time: 25 mins
Ingredients:
Base: Rice paper sheets, cooking oil (for frying).
Filling: 1 carrot, 1 potato, a pinch of cumin, salt, and pepper.
Coating (Optional for extra crunch): A little flour, 1 beaten egg, and panko breadcrumbs.
Topping & Garnish (As pictured): 1 soft-boiled egg (halved), fresh greens, diced avocado, or tomato.
Quick Steps:
1. Make the Spiced Mash
Peel and chop the carrot and potato. Boil or steam them until completely soft.
Mash them together in a bowl, seasoning with cumin, salt, and pepper to taste.
2. Form & Coat (Optional)
Shape the mash into small cubes or patties.
Lightly dust them with flour, dip into the beaten egg, and coat thoroughly with panko breadcrumbs.
3. Wrap & Fry
Soften a sheet of rice paper with a little water, wrap it around the seasoned filling (or use the fried rice paper as a crispy basket shell as shown in the picture).
Fry in hot oil for a few seconds until the rice paper puffs up and turns perfectly crispy. Drain on paper towels.
Plating
Place the crispy rice paper on a plate. Fill it with your spiced carrot-potato mash, then top with a beautiful soft-boiled egg, fresh greens, and diced avocado or tomato.
