Crispy Rice Paper Dessert with Fresh Fruit & Chocolate

Ingredients:
- Base & Sauce: 6 sheets of rice paper, 100g dark or milk chocolate, sunflower oil (for frying).
- Fresh Fruit (Diced): 1 banana, 1 mango, 1 apple, 1 bunch of red grapes, 1 pitaya (dragon fruit).
- Garnish: 20g coconut powder (desiccated coconut).
Quick Steps:
1. Prep the Fruit & Chocolate
Dice all the fresh fruit (banana, mango, apple, grapes, and pitaya) into bite-sized pieces and set aside.
Melt the chocolate smoothly either in a microwave (in short bursts) or using a bain-marie (a heatproof bowl over a pot of simmering water).
2. Fry the Rice Paper
Heat the sunflower oil in a pan.
Dip each rice paper sheet into the hot oil for just a few seconds until it puffs up and turns crispy. Drain on paper towels.
Plating
Drizzle the warm melted chocolate sauce onto the serving plates. Place the crispy fried rice paper on top, then spoon the vibrant diced fruit over the rice paper. Finish with a dust of coconut powder on top.
