Crispy Rice Paper With Chicken

Ingredients:

Filling: 200g chicken breast (minced/ground), 80g mushrooms (chicken leg mushrooms or wood ear mushrooms, minced), 1/2 carrot (diced), 1/4 onion.
Seasoning: Seasoning powder, pepper, salt.
Wrapping & Topping: Rice paper, 100ml unsweetened fresh milk, shredded cheese (Mozzarella).

Quick steps:

1. Sauté the chicken breast and mushroom filling: Mix the minced chicken breast with a little seasoning powder, pepper, and oyster sauce.

Sauté a little onion and garlic until fragrant, then add the onion and carrot and stir-fry until cooked through.

Continue by adding the chicken breast and mushrooms and stir-fry over high heat until the filling is evenly cooked and very dry (to prevent tearing when rolling the rice paper).

2. Dip in Milk and Roll the Rice Paper Rolls

Pour unsweetened fresh milk into a large plate, quickly dip the rice paper rolls in the milk, then spread them out on a cutting board (The milk will give the rice paper a rich, creamy aroma and a beautiful golden brown color when baked).

Spoon the filling into the center of the rice paper roll, fold the edges, and roll it up, gently pinching the corners to create a round, puffy ball similar to a bread roll.

3. Topping with Cheese & Baking (Oven Baking)

Line a baking tray (or air fryer) with parchment paper, and arrange the rice paper balls on it.

Sprinkle grated cheese on top of each rice paper ball.

Preheat the oven or air fryer to 180°C for 10-12 minutes. The rolls are ready when the cheese melts, turns an attractive golden brown, and the rice paper puffs up and becomes crispy.
