Notes on preservation and use of Tanisa rice paper
The storage time will be different based on the type of rice paper. Owing to the characteristic of Trang Bang dew-wetted rice paper, this kind of rice paper has moisture, so its storage time is shorter than that of other the rice paper. If well preserved, Trang Bang dew-wetted rice paper can be stored within a month. However, it is advisory that we should buy an enough amount to use in 1-2 weeks to keep the delicious taste.
Rice paper should be stored dry, airtight or in a foam box and kept away from direct light. They should be used right after opening the package to ensure the deliciousness of the rice paper. Do not store in the air-conditioned rooms because rice paper will get hard and go moldy. Especially, we should not store rice paper in the refrigerator for they will get hard and be inedible.
In addition, consumers often buy banh da nem and store them at home. Here are some tips on preserving this type of rice paper:
In Vietnam, people often use banana leaves to cover the rice paper to make the rice paper more soft. Even for a few days outside, when the leaves gradually dry, the rice paper keeps its softness.
If there are no banana leaves abroad, you can use other leaves such as cabbage or lettuce, which should be kept dried, and cover around the rice paper a few hours before using. This will soften the rice paper wrappers if they becomes hard.
In addition, you can wrap the rice paper in paper and put them in a plastic bag (ziplock) to use within a long time. They should be divided into enough amount to use each time and prevented from opening several times to damage the rice paper. As for the dried and crunchy banh da nem, before you cover them with cabbage leaves, mix them with cabbage leaves and banh da nem will become soft soon.
